A Mandolin is necessary to make these babies turn out properly. Read more . I opted to make her recipe my own by adding a nice sharp cheddar, & by making it into finger food, instead of serving it as you would a pie.
Ingredients:
1 bag small yukon gold potatoes, washed
1 large yellow or white onion
1 cup shredded sharp white cheddar
extra virgin olive oil
sea salt, freshly ground black pepper
Directions:
1. Preheat oven to 425 degrees Fahrenheit. Grease two large muffin pans, set aside.
2. Shred white cheddar and onion into a bowl, mix together with hands until thoroughly combined. Slice potatoes very thinly with mandolin. Layer the potatoes in a flower shape in the bottom of one muffin section, then add a thin layer of the onion/cheese mixture. Repeat, finishing with a last layer of potatoes. Brush top of each with olive oil & sprinkle with salt & pepper. Bake for 45 minutes or until golden. Serve warm as an appetizer or side dish.
