Kinda like eggs in a basket, but scrambled and baked in a muffin pan. Great for brunch or light dinners. Ingredients:
12 slices whole wheat bread |
8 eggs, beaten |
2 t skim milk |
1/2 cup shredded cheddar cheese |
1/2 cup ham, diced |
1 t butter, melted |
Directions:
1. Preheat oven to 425 2. Cut crusts off bread, flatten bread out with a rolling pin 3. Brush muffin cups with melted butter. Smoosh bread slices into cups. Brush bread with butter. Place in oven for a minute or so. 4. Mix remaining ingredients together. Ladle in equal portiona into lined muffin cups. 5. 20-25 minutes or until eggs appear light and bread is toasted. |
