Mini Muffin Yogurt Cakes

A tart bite of lemon is good at any hour. Enjoy these with tea or other occasion.
Ingredients:
4 tablespoons unsalted butter
1/2 cup sugar
2 tablespoons lemon zest
1 egg
3/4 cup flour
1 teaspoon baking powder
1/4 cup low-fat yogurt
1/4 cup lemon juice
Directions:
1. Mix room temperature butter with sugar. Add lemon zest and egg. In another bowl mix flour and baking powder, sift into wet mixture. Pour in yogurt and lemon juice.
2. Spray mini muffin pan lightly, over greasing/spraying will damage cakes. Fill a little more then half way with batter. Bake at 350F for 10-15 minutes. Light brown on edges.
