Mini Muffelattas With Olive Relish |

Found this in one of my recipe magazines. Just love it. Makes 3 dozen appetizers, and never have to turn on the stove! The olive relish is great on chicken or fish, mushrooms, or salad. Prep time equals Olive Relish preparation. Read more . Cook time equals putting it together time. I buy everything pre-sliced at the deli - talk about easy! Ingredients:
muffelattas |
1 loaf sourdough or white party bread, sliced |
1 1/2 pounds salami - sliced 1/4 in thick |
softened butter or margarine |
1 1/2 pounds baby swiss or havarti cheese - sliced 1/4 in thick |
1 1/2 pounds ham (coppa, prosciutto, mortadella) - sliced 1/4 in thick |
1 1/2 pounds provolone - sliced 1/4 in thick |
1 recipe olive relish |
olive relish |
1 c chopped green olives |
1 c chopped black olives |
1 7 oz jar roasted red peppers, drained and chopped |
3/4 c olive oil |
3 t chopped fresh parlsey |
2 t white wine vinegar |
1 t chopped capers, rinsed before chopping |
Directions:
1. MUFFELATTAS 2. Spread thin layer of butter on each slice of bread 3. Trim meat and cheeses into small squares to fit the bread 4. Layer: Salami, Baby Swiss or Havarti, Ham, and Provolne 5. Top with small scoop Olive Relish (I use a melon baller) |
