I found a meatloaf recipe and added some things to it and made mini meatloaves. They came out really good. Ingredients:
2 lbs ground turkey |
1 1/2 cups oats |
2 eggs |
5 garlic cloves, minced |
1/4 large sweet onion, diced |
1 1/2 teaspoons salt |
1/2 teaspoon black pepper |
1/2 teaspoon cayenne pepper |
1 tablespoon dried parsley |
1/2 teaspoon thyme |
1/2 teaspoon oregano |
3 tablespoons mayonnaise (heaping) |
1/2 cup ketchup |
2 teaspoons hot sauce |
2 ounces cheese, shredded |
Directions:
1. Combine all ingredients, except cheese. 2. Divide into 8 equal parts. 3. Take one of the 8 parts and divide it in half. Shape the half into a mini-loaf. Put some of the cheese on it and then put the other half on top of the 1st half to make a loaf with cheese in the middle. 4. Make 8 mini meatloves this way. 5. Place each loaf onto an ungreased casserole dish. Bake at 375, for 30 minutes or until completely cooked. Serve. |
