A delicious little treat Ingredients:
12 vanilla wafers |
1 (8-ounce) package cream cheese |
1/3 cup granulated sugar |
1 large egg |
2 teaspoons lemon juice |
1 teaspoon grated lemon peel |
1/2 teaspoon vanilla extract |
Directions:
1. 1. Preheat oven to 325°F (160°C). Line a muffin tin with paper baking cups. 2. 2. Divide vanilla wafers, placing one in the bottom of each cup. In a medium mixing bowl, beat together cream cheese, sugar, egg, lemon juice, lemon peel and vanilla until light and fluffy. 3. Fill paper cups two-thirds full. 4. 3. Bake for 15 to 20 minutes or until cheesecake is just set. 5. Makes 12 miniature cheesecakes. |
