Easy and delicios mini Irish Soda Breads. Bake up faster than the traditional. Woman's World Ingredients:
4 c flour |
2/3 c sugar |
1 tbs baking powder |
1 tsp baking soda |
1/2 tsp salt |
3/4 c dried currants |
1 c buttermilk |
3/4 c shredded cheddar cheese |
3 eggs |
Directions:
1. Preheat oven to 325 degrees. Coat large baking sheet witrh cooking spray. In large bowl,combine flour,sugar,baking powder,soda,salt,currants and cheese Stir in buttermilk and 2 eggs until dough forms. 2. On generously floured surface,knead dough till smooth,about 2 mins. Divide dough into 8 evenly sized pieces;shape each piece into round loaf. Place 2 to 3' apart on baking sheet. 3. With kitchen scissors or serrated knife,cut 1/2 deep x into top of each loaf. Lightly beat remaining egg;brush over tops 4. Bake 25 mins or till loaves are goldenand sound hollow when tapped on the bottom. 5. Transfer from baking sheet to rack ;let cool completely. |
