A quick, easy appetizer. This came from a recent Miami Herald cooking column on how to use up leftover ham. Ingredients:
4 eggs |
1/2 cup shredded cheese (your choice) |
1/2 cup finely diced cooked ham |
2 green onions, chopped fine |
salt and pepper |
1 package refrigerated crescent dinner roll |
Directions:
1. Flatten out the crescent rolls into one large rectangle and cut into 2 squares. 2. Spray mini-muffin pan with cooking spray. 3. Gently push squares into the muffin pan holes. 4. Beat the eggs and add the other ingredients. 5. Fill the muffin pastries. 6. Cook at 375 degrees for 10-12 minutes until golden brown on top. 7. Serve warm. 8. May be reheated in the microwave. |
