Ingredients:
16 egg whites |
1/2 cup fat-free milk |
1/2 tsp freshly ground black pepper |
1/4 tsp salt |
4 oz prosciutto |
2 2/3oz (1/3 cup) fat-free cheese, shredded |
2 tbsp fresh sage |
1/2 onion |
2 tbsp chopped fresh italian parsley |
Directions:
1. Preheat the oven to 375 degrees F. 2. Speay 2 mini muffin tins (each with 24 cups) with nonstick spray. Whisk the egg whites, milk, pepper, and salt in a large bowl to blend well. 3. Stir in the ham, cheese, and parsely. 4. Fill prepared muffin cups almost to the top with the egg mixture. 5. Bake until the egg mixture puffs and is just set in the center, about 8 to 10 minutes. 6. Using a rubber spatula, loosen the frittatas from the muffin cups and slide the frittatas onto a platter. 7. Serve immediately. |
