These mini egg rolls are a great way to use up leftover egg roll wraps. The flavors are unlimited. Ingredients:
egg roll wraps cut into 1/4s |
cream cheese |
fruit cut into bite size pieces |
cooking oil |
Directions:
1. Make all up all egg rolls before starting to cook. 2. Take 1 piece of egg roll, place about 1/2 tsp cream cheese in the center and top with a small piece of fruit. 3. Roll one corner over the fruit 4. Dampen 2 side corners with wet fingers and roll inward. 5. Dampen final corner with wet fingers and bring over center of eggroll 6. Fry about 1 minute on each side or until golden brown. 7. Wetting the corners creates a seal on your egg roll |
