Mini Chocolate Tartlets

Small pastry case are filled with a rich chocolate filling to serve as petits fours.Use mini muffin pans to make the pie shells.
Ingredients:
1 1/2 cups flour
75 grams butter
15 grams(1tbsp) sugar
about 3 tbsp water
filling
100 grams soft full-fat cheese
25 grams sugar
1 small egg,lightly beaten
50 grams dark chocolate
to decorate
1/3 cup heavy cream
chocolate curls
cocoa powder,for dusting
Directions:
1. Preheat oven to 375 F,position oven rack in center.
2. Crust:
3. Sieve the flour in a bowl.Cut in the butter in small pieces and rub in with your fingers till it resembles fine breadcrumbs.
4. Stir in the sugar.Add enough water to mix a soft dough,then cover and chill 15 minutes.
5. Roll out pastry on a lightly floured surface and use to line 18 mini tartlet pans.Prick the bases with a toothpick.
6. Filling:
7. Beat together the cheese and the sugar.Beat in the egg for 1 minute.
8. Melt the chocolate and beat it into the mixture.Spoon in the pastry cases.
9. Bake for 15-18 minutes till the filling is set and the pastry is crisp to the touch.Cool.
10. Decoration:
11. Whip the cream till stiff peaks,place it in a piping bag fitted with a star nozzle.Pip rosettes on top of each tartlet and dust with cocoa or chocolate curls.Chill
