Mini Chickpea Cakes Tapas |

Great for a cocktail or tapas party. great for tailgating easy to make. Ingredients:
1 15oz can of chickpeas (garbonzo beans), drained and rinsed. |
1 cup shredded carrots or cucumber your choice |
1/3 cup seasoned bread crumbs |
1/4 cup creamy italian salad dressing |
1 egg |
1 dash green tabasco |
Directions:
1. preheat oven to 375 degrees 2. spray baking sheet with nonstick spray 3. mash chickpeas coursely with a potato masher . 4. Stir in carrots or cucumber, bread crumbs, salad dressing, tabasco, and egg; mix well 5. shape mixture into small patties (about 1 tablespoon in size) 6. place on baking sheet 7. bake 15 to 18 minutes, (turning halfway through baking time,) until cakes are browned on both sides. 8. serve warm with additional salad dressing for dipping (i spice mine up by adding green tabasco to the dipping mix). 9. enjoy |
