QUICK EASY LITTLE CAKES TO POP INTO THE KIDS LUNCH BOX OR YOURS ;) .....IT'S DEFT NOT FOR THE DIETERS....LOL Ingredients:
2 rolls shortcrust pastry |
1 extra-large egg white, litly shisked |
30ml sugar |
filling |
40ml amaretto liqueur (or brandy) |
80ml dried cranberries |
460g full-fat cream cheese |
170ml castor sugar |
1 extra-large egg |
250ml cream |
55ml cake flour |
125ml blanched almonds, coarsely chopped |
Directions:
1. PRE-HEAT OVEN 180 C 2. WARM THE LIQUEUR, THEN ADD THE CRANBERRIES AND LEAVEE THEM TO SOAK. 3. SET ASIDE TO USE LATER IN THE FILLING 4. ROLL OUT THE PASTRY AND CUT OUT 12 CIRCLES TO LINE A MUFFIN TIN 5. PRICK WITH A FORK AND BAKE FLIND FOR 10MIN 6. ROLL OUT THE EXCESS PASTRY AND CUT OUT 2MM STRIPS 7. STICK THETOP EN OF 2 PASTRY STRIPS TOGETHER THEN TWIST THE STRIPS TO CREAT A ROPE EFFECT 8. BRUSH THE EDGES OF THE BAKED PASTRIES WITH EGG WHITE 9. STICK A PIECE OF TWISTED PASTRY AROUND THE EDGES OF EACH PASTRY SHELL 10. BRUSH WITH EGG WHICTE AND SPRINKLE WITH SUGAR 11. FILLING: 12. BEAT TOGETHER THE CREAM CHEESE AND SUGAR, THEN BEAT IN THE EGG AND CREAM 13. FOLD IN THE FLOUR AND HALF OF THE SOAKED CRANBERRIES 14. SPOON THE FILLING INTO THE SHELLS 15. TOP WITH THE REMAINING CRANBERRIES AND SPRINKLE WITH ALMONDS 16. BAKE IN A PRE-HEATED OVEN FOR ABOUT 15 MIN OR UNTIL JUST SET 17. SWITCH OFF THEOVEN, OPEN THE OVEN DOOR SLIGHTLY AND LEAVE THE CHEESECAKES IN THERE UNTIL COOL 18. ENJOY HUNNY BUNNY'S MWAH |
