My toddler loves them. I serve this for lunch, but you could also serve it as an appetizer. I freeze these & reheat for a quick lunch. Ingredients:
1 cup flour |
4 tablespoons margarine |
4 teaspoons water |
1/2 cup cheddar cheese, shredded |
2 slices wafer thin ham, chopped |
1/2 cup frozen corn |
1 egg |
1/2 cup milk |
1 pinch paprika |
1 dash salt & pepper |
Directions:
1. For Pastry: Rub together flour & margarine until it resembles breadcrumbs. 2. Stir in water & mix to make a smooth dough. 3. Lightly knead on a floured surface. 4. Cut out 12 3 inch circles. 5. Press into lightly greased muffin pan. 6. For Filling: Mix cheese, ham & corn. 7. Divide among pastry cups. 8. Beat together egg, milk, salt & pepper, pour into cups. 9. Sprinkle with paprika. 10. Bake 400 degrees for 12-15 minutes. 11. Serve warm. |
