Mini Apple Cheddar Turkey Meatloaves |

Shred the apple and onion using the large holes of a box grater. Cheese grits and a salad make the perfect complements Ingredients:
1 -1 1/2 lb turkey (ground) |
1/4 cup panko breadcrumbs (japanese bread crumbs or fine dry breadcrumbs) |
1 onion, shredded |
1 medium apple, peeled cored and sredded |
1 large egg, lightly beaten |
1 teaspoon salt |
3/4 teaspoon pepper |
1 1/4 cups shredded cheddar cheese, divded |
Directions:
1. preheat oven to 375. gently combine ground turkey, next 6 ingredients and 1/2 C cheese just until combined, using hands. Spoon turkey mixture into 12 lightly greased muffin cups. Bake at 375 degrees for 16 minutes Sprinkle with remaining cheese. Bake 5 mins or until cheese is melted and a meat thermometer registers 165. |
