Ingredients:
4 slice(s) bacon
1 cup(s) onion chopped
4 clove(s) garlic minced
1/2 pound(s) ground beef
1 cup(s) celery diced
1 cup(s) carrots cubed
2 cup(s) tomato puree
2 can(s) stewed tomatoes (14.5oz)
1 1/2 can(s) beef broth
1 can(s) french onion soup
3 cup(s) water
1 1/2 cup(s) red wine
1 teaspoon(s) oregano
1 teaspoon(s) basil
salt & pepper to taste
1 cup(s) lasagna noodles smashed
1 can(s) cannellini beans (15oz) drained
1/4 cup(s) parsley, fresh chopped
1 can(s) kidney bean
Directions:
1. In a large stock pot, cook bacon, remove. Add onion, garlic, carrots, celery and saute until translucent. Transfer to plate, and saute ground beef until browned. Add sauted veggies, pureed tomatoes, stewed tomatoes, broth, condensed soup, water, wine, oregano, basil, salt and pepper. reduce and simmer 2-3 hours
2. Stir in pasta, cannellini and kidney beans and parsley. cook for 15 minutes and serve with fresh parmesan cheese
3. can also add diced zucchini
