Different version from some I've seen - really good flavor! Ingredients:
1 lb beef steak |
4 tablespoons low-sodium soy sauce |
2 garlic cloves |
1 tablespoon olive oil |
12 oz tomatos, plum, chopped |
1/4 lb green beans, diced |
2 cups water |
1 tablespoon oregano, dried |
1 cup celery, chopped |
10 1/2 oz kidney beans, canned |
105 g. pasta, dry elbow-shaped macaroni, whole wheat |
Directions:
1. In a small bowl combine 1 TB soy sauce and garlic. Add beef and stir to coat. Let stand while you prepare the remaining ingredients. 2. In Dutch oven or medium-sized pot, heat oil to medium-high heat. Add beef mixture and stir-fry about 1 minute. Remove 3. In same pot, combine tomatos, oregano, remaining soy sauce, water and celery. Cover and simmer on medium-low 15 minutes. 4. Add green beans. Simmer 10 minutes. 5. Add pasta. Simmer 10 minutes. 6. Add beef and beans and simmer until ready to eat or until beans are warm. 7. Serve with crusty bread or topped with feta cheese if desired. |
