Ingredients:
1/4 cup(s) olive oil |
5 clove(s) garlic minced |
2 onions chopped |
4 stalk(s) celery or celery seed ok chopped |
2 carrots chopped |
10 ounce(s) swiss chard or kale cut in strips |
1/2 head(s) small cabbage shredded |
3 potatoes (medium) peeled and cubed |
28 ounce(s) diced tomatoes |
2 cup(s) bullion or stock - beef is best |
1 parmesan cheese rind |
15 ounce(s) cannellini beans or white beans |
1/2 cup(s) orecchiette or orzo |
basil oregano salt pepper to taste |
Directions:
1. Sauté in olive oil the garlic, onions, celery, and carrots until onions are translucent 2. Add chard/kale, cabbage, potatoes, tomatoes, stock and cheese rind. Simmer 3 hours. You will need to add more liquid 3. Add beans, pasta, and seasonings 4. Serve topped with Parmesan and/or olive oil |
