i made this last night for lunches today nice and warming whilst its snowing Ingredients:
2 onions, chopped |
1 courgette, diced |
3 carrots, diced |
2 garlic cloves |
1 vegetable stock cube |
1 teaspoon dried rosemary |
1 teaspoon dried oregano |
400 ml passata |
2 teaspoons balsamic vinegar |
2 teaspoons sugar |
1 pinch salt |
1/2 teaspoon ground pepper |
50 g frozen peas |
50 g spaghetti (broken into bits) |
500 ml boiling water |
2 tablespoons olive oil |
28 g fresh basil, torn |
Directions:
1. Heat oil in pan add onions and sweat for 5 minutes add remianinbg vegetables and garlic and fry for a furtehr 5 minutes. 2. add all remaining ingredients and except the basil, bring to boil, turn heat down and simmer for 20 minutes. 3. tear basil and add just before serving. |
