Minestrone is somewhat like Mom's homemade vegetable soup, but the tomatoes and herbs give it a rich, decidedly Italian flavor. Ingredients:
28 oz chicken broth |
14 1/2 oz tomatoes, chunky |
2 oz pasta shells, small uncooked (1/2 cup) |
1 tsp dried basil leaves |
1/4 tsp black pepper, freshly ground |
1/2 tsp marjoram or oregano leaves |
2 medium carrots |
8 oz kidney beans, drained |
1 tbsp parsley, chopped (optional) |
1/4 cup grated parmesan cheese |
Directions:
1. Combine broth, tomatoes, pasta, basil, marjoram and pepper in a large saucepan. Cover and bring to boil over high heat 2. Slice carrots thinly. Stir carrots and beans into soup ans reduce heat to medium. Cover and simmer for 10 minutes or until carrots are tender. Sprinkle with parsley and cheese. 3. Serving Suggestions: Serve with garlic croutons |
