Delicious version of this classic Italian soup. Ingredients:
1 chopped onion |
2 cloves crushed garlic |
3 slices chopped bacon |
4 chopped tomatoes |
3 tablespoons chopped parsley |
2 1/4 liters beef stock |
60 ml red wine |
1 chopped carrot |
2 chopped potatoes |
3 tablespoons tomato puree |
80 g peas |
80 g pasta |
2 tablespoons olive oil |
Directions:
1. Heat oil and cook the onion, garlic and bacon until browned. 2. Add tomato, parsley, stock and red wine. 3. Simmer. 4. Add carrot, potato, and tomato puree. 5. Simmer. 6. Add peas and pasta. 7. Simmer until pasta and vegetables are tender. 8. Season to taste. |
