Mincemeat With Green Tomato |

an old fashioned winter pie filling that smells fantabulous when preparing and again when it finally gets to be a pie! Ingredients:
1 lb stew beef chunk, minced |
1/2 cup suet (optional) |
20 green tomatoes, cored |
18 tart apples, peeled |
1 1/2 lbs raisins |
3 tablespoons cinnamon |
3/4 cup sweet fruit juice |
3/4 cup citron, minced |
6 tablespoons orange rind |
3 teaspoons salt |
1 tablespoon clove |
1 1/2 teaspoons allspice |
1 teaspoon ginger |
1 cup beef stock |
brandy, if desired |
1 teaspoon nutmeg |
Directions:
1. Cover meat with water and simmer until tender. 2. Force meat, suet, tomatoes and apples through food processor until it is in smallish pieces. 3. Place in a large saucepan and add remaining ingredients (except brandy) and simmer 1 hour, stirring frequently. 4. Fill 3 hot, sterilized 1-quart jars. 5. Place 2 tablespoons brandy on top, if desired. 6. Seal. Store in cool place. 7. Makes a wonderful minced pie! |
