Mincemeat, The REAL thing circa 1938 |

I remember *real* mincemeat as was layed down in the food cupboard in our basement every fall. It's got something that you just don't get in cans or jars. Hope you like it. This is the way Prudence Penny said to do it and that's good enough for me. Ingredients:
3 lbs lean beef |
1/2 lb suet |
6 lbs sour apples |
3 lbs seeded raisins |
2 lbs seedless raisins |
1/2 lb citron, minced |
1 nutmeg, grated |
2 lbs sugar |
2 cups cider vinegar |
2 cups beef stock |
2 cups molasses |
1 tablespoon clove |
1 teaspoon cinnamon |
1 teaspoon mace |
1 tablespoon salt |
Directions:
1. Cut meat in cubes, cover with water and simmer until tender. 2. Cool. 3. Force meat, suet and pared and cored apples through a food chopper. 4. Add remaining ingredients plus 2 cups stock and simmer 1 hour, stirring frequently. 5. Fill into sterilized jars, seal and keep in a cool place. 6. I'm Adding Can in a waterbath 20 min of low boil after the jars are sealed . |
