Very rich mincemeat cookie. I included the recipe for mincemeat that I use for my pies as that is how I make mincemeat. I don't remember how many cookies it makes, but it's a lot. Servings are hard to do for cookies. Read more . You should get, at least 4 dozen, if not more., depending on size Ingredients:
1 1/2 c. butter |
2 c. sugar |
2 eggs |
1 c. brandied mincemeat |
5 c. pre-sifted all-purpose flour |
1 tsp. each: salt, soda, nutmeg, cinnamon |
1/2 tsp. cloves |
brandied mincemeat |
1 jar of mincemeat |
3/4 jar of orange marmalade |
lots of whisky/brandy |
mix and let flavors mingle overnight |
Directions:
1. Cream together butter and sugar until light and fluffy. Add eggs and 2. beat well. Stir in mincemeat. Sift together flour, salt, soda and 3. spices. Add gradually to first mixture, stirring well after each 4. addition. Add walnuts. 5. Shape dough into 2 rolls about 2 inches in diameter. Wrap in waxed 6. paper. Chill until firm. Slice about 1/4 inch thick with thin sharp 7. knife.. Place on ungreased baking sheets (I use parchment paper on my baking sheets).
