Mincemeat Muffins II

Ingredients:
2 cups all-purpose flour
1 tablespoon baking powder
1/4 teaspoon salt
2/3 cup sugar
2 eggs
1/2 cup whole milk
1/3 cup unsalted butter, melted
1 tablespoon finely grated orange zest
2/3 cup prepared mincemeat
Directions:
1. Preheat oven to 400°; line 12 muffin cups with paper liners.
2. In a large bowl, whisk together flour, baking powder, and salt.
3. In a medium bowl, whisk together sugar, eggs, milk, butter, and orange zest until well blended.
4. Stir in mince meat until well blended.
5. Add the egg mixture to the flour mixture, stirring until just blended.
6. Divide batter equally among prepared muffin cups.
7. Bake for 22-25 minutes or until tops are golden brown and pick comes out clean.
8. Let cool in pan on wire rack for 5 minutes, then transfer to the rack to cool.
