What could be more festive for the winter holidays than 'fruitcake cookies' flavored with some great-tasting mincemeat! Ingredients:
1/4 cup vegetable oil |
1/2 cup granulated sugar |
1 egg |
1 teaspoon almond extract |
1 cup mincemeat |
1 3/4 cups all-purpose flour |
1 teaspoon baking powder |
1/2 teaspoon salt |
1/2 cup candied red cherries |
1/2 cup green glazed cherries |
Directions:
1. Preheat oven to 350 degrees F, & lightly coat baking sheet with cooking spray. 2. In large bowl, beat oil & sugar until light. 3. Beat in egg & almond extract until smooth. 4. Stir in mincemeat. 5. In medium bowl, whisk together flour, baking powder & salt. 6. Beat into egg mixture until blended. 7. Stir in cherries. 8. Drop by rounded teasoonfuls onto parchment paper lined baking sheets. 9. Bake 12-14 minutes, or until lightly brown & firm. 10. Cool on wire rack. |
