This recipe is from Betty Crocker. I suppose I like it so much because, while I really enjoy mincemeat, a slice of pie is just too much mincemeat for me. With this great cookie, you can enjoy mincemeat but not be overwhelmed by it! Ingredients:
3 cups bisquick |
1 cup sugar |
1 egg |
3 tablespoons soft butter |
1/4 cup milk |
1 1/2 cups prepared mincemeat |
1/2 cup powdered sugar, stirred together with |
1 teaspoon finely shredded orange peel |
1 tablespoon orange juice |
Directions:
1. Heat oven to 375°. 2. Grease an oblong pan, 13x9x2 inches. Thoroughly mix all ingredients except mincemeat and Orange Glaze. 3. Pat half of dough into pan to within 1/2 inch of each edge; spread with mincemeat. Pat out remaining dough to same size on waxed paper. 4. Place paper side up over mincemeat; peel off waxed paper. 5. Bake 30 minutes. 6. Cool slightly. 7. Drizzle Orange Glaze over top. 8. Cut into 1 1/2-inch squares. 9. Orange Glaze: . |
