This recipe came from one of my friends who also loved mincemeat as much as I do! Ingredients:
3/4 cup shortening |
1 cup brown sugar, packed |
1/4-12 cup molasses |
1 egg |
1 teaspoon vanilla extract |
1 1/2 cups all-purpose flour |
1 teaspoon baking soda |
1/4 teaspoon salt |
1 teaspoon ground ginger |
1 1/2 cups mincemeat, with |
brandy, and |
rum |
1 cup walnuts, chopped |
3 cups quick-cooking oats |
Directions:
1. Preheat oven to 375 degrees F. 2. In medium bowl, cream shortening & sugar. 3. Add molasses, egg & vanilla, & beat well. 4. Whisk together flour, baking soda, salt & ginger. 5. Add flour mixture to shortening mixture, & combine well. 6. Add mincemeat & nuts, & combine well. 7. Add oats, & combine well. 8. Drop by rounded teaspoons onto baking sheet. 9. Bake 15 minutes, then cool on wire rack. |
