Granted, many people will think they don't need any mincemeat, much less 8 quarts, but for the mincemeat lovers, here's a slow-cooked recipe. This is a crockpot recipe, so don't be put off by the long cook time - you don't have to be hovering during the cooking. Ingredients:
3 lbs beef or 3 lbs pork |
2 teaspoons salt |
3 quarts applesauce |
1 cup apple cider |
5 cups grape juice |
3 lbs raisins |
1 lb currants |
3 lemons, juice and zest of |
1 cup molasses, plus |
2 tablespoons molasses |
1 cup dark corn syrup |
1 teaspoon oleo |
3 tablespoons cider vinegar |
3 1/2 teaspoons cinnamon |
5 teaspoons fresh ginger, minced |
3 1/2 teaspoons nutmeg |
1 1/4 teaspoons cloves |
4 1/2 teaspoons brown sugar |
Directions:
1. Cook the meat and 1 tsp salt in the crockpot for 8 hours or until very tender; then grind coarsely. 2. Add all other ingredients and cook another 4 hours, seasoning to taste. 3. Extra mincemeat can be canned or frozen to store. |
