easy hamburger stew..You can also add 4 medium potatoes cubed for a complete meal..If you make as usual but put the mashed potatoes on top and top with butter ..bake for 45 mins...You now have shepherds pie.. My mother made this for our family at least once a week...growing up in Belfast. Northern Ireland.. The old fashioned way was to boil the meat ( it keeps the mince tender) but you can also cook the meat first then proceed with the recipe.
Ingredients:
1 lb lean ground beef
1 1/2 cups water
1 large onion, diced
2 large carrots, diced
1 cup frozen peas
2 instant oxo beef cubes or 2 beef bouillon cubes
1 tablespoon bisto or 1 tablespoon beef gravy
1 teaspoon rosemary
1 teaspoon thyme
pepper
4 medium potatoes, mashed
Directions:
1. In a saucepan combine 1 cup water, beef,onions,carrots, peas and oxo cubes.
2. bring to a boil and cook for 5 mins.add rosemary and thyme.reduce the heat to simmer and cook uncovered for 1 hour - Combine the remaining 1/2 cup of water and mix in the bisto.add this mixture to the stew and mix well stir until the stew thickens.add pepper to taste.
3. Serve on mashed potatoes.
