A delicate orange and champagne flavor pervades these creamy truffles. Sample these afternoon or evening treats while sipping champagne. Hmm,Hmm Good!
Ingredients:
10 ounces bittersweet chocolate
2 egg yolks, beaten
1 cup powdered sugar, divided
1/2 cup heavy cream
4 tablespoons butter
4 tablespoons champagne
2 tablespoons orange-flavored liqueur
also
paper or foil liner for minature muffin cups
Directions:
1. Melt bittersweet chocolate in a very heavy pan on low heat, stirring often until completely smooth.
2. In a seperate bowl, cream egg yolks and 1/2 cup powdered sugar.
3. In a saucepan or double boiler, mix heavy cream, the other 1/2 cup powdered sugar, and butter, stirring constantly until the mixture boils.
4. Cool only slightly (you want to raise the temperature of the egg yolks to 160 degrees to kill salmonella bacteria). Gradually drizzle the hot mixture into the yolks while whisking constantly. Blend in melted chocolate, champagne and liquer.
5. Allow the mixture to cool in the refrigerator.
6. When set, roll into 1-inch diameter balls. Roll in cocoa and place in the liners in small muffin cups.
7. Refrigerate until ready to serve. Enjoy!
