I got this recipe from my SIL when she made it for breakfast one morning while we were at the beach for DD #2's wedding. She made 2 pans of it and they were both gone before I could turn around twice. Since then, the recipe has been passed around to everyone in the family and gets rave reviews. For the sausage, my family chooses a HOT version as they like theirs spicy. Ingredients:
1 lb bulk pork sausage |
1/4 cup jalapeno, sliced |
2 cups sharp cheddar cheese, grated |
3 tablespoons margarine |
3 cups cooked grits (freshly made and still hot) |
3 eggs, beaten |
1 1/2 cups milk |
Directions:
1. Preheat oven to 350 degrees. 2. Spray a 13 X 9 inch pan with Pam. 3. Cook sausage with jalapenos until done then drain well. 4. Once drained, spoon the sausage into the baking dish. 5. Add the cheese and butter to the hot grits and stir until they are melted. 6. Combine eggs and milk and stir well; then pour the egg mixture into the grit mixture and mix until well blended. 7. Pour this mixture over the sausage and bake uncovered for one hour. 8. Garnish with cheese and more jalapenos if you desire. |
