This is from a hand-written recipe of my mom's, called Biscorta - large recipe . It makes approximately 144 cookies. Mimi used to make these at Christmas time, usually with my younger sister. They are delicious. There's not a lot of detail, and no substitutions are mentioned. I remember these cookies being no larger than 2-3 inches long, (in pretzel shapes). I am guessing at the prep and cooking time (for 144 cookies). At the bottom of the recipe it says, THIS IS ALOT OF DOUGH. VERY GOOD AND NOT TOO SWEET. Enjoy. Ingredients:
6 cups flour |
1 cup sugar |
1 egg |
1 egg yolk |
8 teaspoons baking powder |
1/2 teaspoon salt |
1 cup milk |
3/4 cup shortening |
1 teaspoon vanilla |
Directions:
1. Mix flour and sugar and cut in shortening. 2. Beat eggs slightly and add to mixture. 3. Add baking powder, salt, vanilla and milk. 4. Mix well. 5. Roll dough (small pieces at a time) to about 1/4 -inch thick. 6. Cut strips and twist dough like pretzels, or use cookie cutters and cut out desired shapes. 7. Add sugar sprinkles before baking if desired. 8. Bake in a preheated 375 degree F oven for about 15 minutes. 9. Cool 5 minutes, remove to rack and cool completely. 10. NOTE: My guess is you could sprinkle with confectioner's sugar after baking. |
