This is a quick easy pie that I make quite often. Ingredients:
1 pkg. lorna doone cookies |
3/4 cup softened butter |
1 1/2 cups powdered sugar |
2 slightly beaten eggs |
1 cup whipped cream or small tub cool whip |
1-20 oz. can drained crushed pineapple |
Directions:
1. Crush cookies and set aside 1/4 cup. 2. Mix remaining cookies with 1/4 cup butter and press into 9x13 pan. 3. Bake 15 minutes at 300 degrees. 4. Remove from oven and cool. 5. Cream remaining butter with sugar, mix in eggs and spread over cookie crust. 6. Combine pineapple and whipped cream and spread over above layer. 7. Sprinkle top with reserved cookie crumbs. 8. Refridgerate covered with foil, and store for a day (if possible!). 9. Cut into squares and serve |
