Millet Pancakes/Waffles

These are wonderful.
Ingredients:
1 cup millet flour
1/2 cup barley or 1/2 cup oat flour
1 teaspoon baking powder
2 tablespoons cornstarch or 2 tablespoons arrowroot
1/2 teaspoon salt
2 teaspoons sugar
2 eggs
1 1/3 cups milk
3 tablespoons canola oil
1/2 cup dried fruit
Directions:
1. Mix together the dry ingredients, mix in the wet ones until just mixed. Cook on a hot waffle iron, or frying pan until golden brown.
