Millet, packed with B vitamins and nutrients, makes a great start to the day in these pancakes. Top them with genuine maple syrup and/or yogurt with raspberries or other favourite fresh or thawed frozen fruit. Precook the millet the day before for a quick brekkie. Ingredients:
1 c millet |
2 c buttermilk |
1/2 c water |
1 tsp salt |
1 t sugar |
1/3 c plain nonfat yogurt |
1 egg, lightly beaten |
2 t flour (any kind) |
2 t oil |
Directions:
1. In a medium saucepan, bring the millet, milk, water, and salt to a boil. Simmer, covered for 20 minutes or until the liquid has been absorbed. 2. Stir in sugar, yogurt, egg, and flour. 3. In a large skillet, heat the oil. Drop the millet mixture into lumps about 3 diameter and press with the back of the spoon to spread the batter more evenly. 4. Fry until golden brown, turning once, about 8 to 10 minutes in all. |
