This is a favorite dessert that originated at the Carribbean Room in the Pontchartrain Hotel on St. Charles Street in New Orleans. Fantastic! Ingredients:
one prebaked pie crust |
1 pint good quality vanilla ice cream |
1 pint good quality chocolat ice cream |
4 egg whites |
1/2 tsp vanilla |
1/4 tsp cream of tartar |
1/2 cup sugar |
Directions:
1. Layer ice cream in pie shell. Make a meringue by beating egg whigtes with vanilla and cream of tartar until soft peaks form. Gradually add sugar, beating until stiff and glossy and sugar is dissolved. 2. Spread meringue over ice cream to edges of pastry. 3. Broil 30 seconds to one minute to brown meringue. 4. Freeze several hours or longer 5. Drizzle choclate suace over each serving. |
