Author said you could switch the cheeses around to suit your preference. Prep time does NOT include chilling time. Ingredients:
20 ounces frozen chopped spinach |
8 slices white bread |
2 eggs, beaten |
1/2 cup butter or 1/2 cup margarine, melted |
1/3 cup parmesan cheese, grated |
1/4 cup romano cheese, grated |
1/4 cup asiago cheese, grated |
1 teaspoon dried thyme |
2 garlic cloves, minced |
8 shallots, minced |
1/4 teaspoon salt |
1/2 teaspoon fresh ground pepper |
Directions:
1. Thaw the spinach and drain. Squeeze out all of the moisture. 2. Lightly toast the bread until golden brown. Let cool and place in a blender or food processor and blend until finely crumbed. 3. Combine all of the ingredients in a large bowl and chill for three hours or overnight. 4. Form into balls and place on a greased cookie sheet. 5. Balls can be covered and refrigerated at this point for up to twelve hours. 6. Bake at 400 degrees for 12-15 minutes, or until golden brown. |
