This started out as a simple recipe, but the more I made it the more I changed it, and everytime myself and my family enjoyed it even more. It's simple and easy, I hope your family enjoys it as well. Ingredients:
3 medium carrots, peeled and chopped |
2 medium tomatoes, chopped |
3/4 cup mushroom |
2 medium zucchini, chopped |
1 green bell pepper, chopped |
1 sweet red pepper, chopped |
1 medium onion, chopped |
3 garlic cloves, minced |
3 tablespoons olive oil |
1 (15 ounce) can pinto beans |
1 (15 ounce) can black beans |
2 (750 ml) salsa (i use homemade) |
1 teaspoon cumin |
2 tablespoons dried oregano |
2 tablespoons dried parsley |
2 tablespoons chili powder |
1 tablespoon sugar |
salt & pepper |
Directions:
1. In a large pot, saute all vegetables and garlic in the oil. 2. Drain and rinse the beans. 3. Add to pot along with remaining ingredients. 4. Bring to boil. 5. Once boiling, let simmer for 30 minutes. |
