Nice and mild, brings out the best in okra Ingredients:
1 quart canned okra |
salt, to taste |
pepper, to taste |
2 eggs |
2 teaspoons baking powder |
flour |
Directions:
1. Boil okra; strain off water and mash. 2. Season with salt and pepper, beat in eggs, baking powder, and enough flour to make a stiff batter. 3. Drop a couple of tablespoonful at a time in deep fat fryer and fry till done. 4. Appox. 5. two minutes. |
