From a community cookbook called If It Tastes Good, Who Cares? You can make a double or triple batch and then freeze in zip lock bags. Not sure how many this serves so I'm guessing 4 as I haven't made it yet. Recipe called for a small can of mushrooms so I guessed the ounces. Ingredients:
2 tablespoons butter |
2 tablespoons olive oil |
1 cup rice, uncooked |
1 medium onion, chopped |
1 garlic clove, minced |
1 cup bacon, crisp, crumbled |
2 tablespoons dry white wine |
1 (6 ounce) can mushrooms |
2 (10 1/2 ounce) cans chicken broth |
salt |
pepper |
1/2 cup parmesan cheese |
Directions:
1. Heat butter and oil in heavy skillet. 2. Add rice, onion, and garlic and brown until rice is golden. 3. Add balance of ingredients; cover and bake at 350 degrees F. for 45 minutes or until rice is dry. |
