I make this up at night and it simmers in the crockpot all night for a spicy way to start my day. I make sure I get up earliest so that the pot isn't empty. Believe it or not , I have gotten up to find the pot empty. Ingredients:
4 lbs very good beef tips cut into one inch cubes |
1 medium white onion (chopped finely) |
1 bell pepper half (chopped finely) |
3 tablespoons vegetable oil |
lawry's season salt |
pepper |
3 garlic cloves (minced) |
1 4 cup flour |
pinch of chili powder |
1 15 ounce can rotel tomatoes and green chilis - i like the hot ones in mine ! feel free to use mild or medium if you'd like. |
1 15 ounce can beef broth |
large tortillas |
picante sauce ( i like pace picante myself - chunky ) |
Directions:
1. Start by heating the vegetable oil in a large stock pot 2. I season the tips with Lawry's, pepper and then coat with the flour. 3. I cooked the tips and the chopped onion over very high heat and brown them thoroughly. 4. I reduce the heat and add the garlic,Rotel,Beef Broth and the chili powder. 5. I bring this to a boil and transfer this to a crock pot for the remainder of the cooking time.I serve this on tortillas for breakfast with Picante Sauce 6. If you have any left you may add diced potatoes to the crock pot and serve the Mexican stew with mexican rice and beans for a great dinner.In our home we don't have many left overs but if you do come up with something creative ! Two meals out of one would be great. 7. ENJOY!!!! |
