High Fiber, whole grain muffins
Ingredients:
1 cup oat bran
1 cup whole wheat flour
1 cup wheat germ
1 cup oatmeal (old fashioned)
2 teaspoons baking powder
3/4 teaspoon baking soda
1 1/2 teaspoons non-fat powdered milk
1 cup chopped walnuts or pecans
1 teaspoon salt
3 egg whites
1 1/2 teaspoons canola oil
1 cup honey
1 1/2 teaspoons vanilla
1 cup chopped dates (and or or 1 cup raisins)
1 1/2 cups all-bran cereal, soaked in (cereal)
1 1/4 cups skim milk (cereal soak in for 3 minutes)
Directions:
1. Soak All-Bran in Skim Milk for 3 minutes as you combine and mix dry ingredients. Combine and mix wet ingredients. Add mixtures together, stirring only until totally moistened. Spoon into paper-lined muffin tins and bake at 410 for 22 minutes.
