OK, my favorite fish is...........Fried Catfish......you guessed it. My idea of a seven course meal is a six pack and a fried catfish. Ingredients:
2 eggs |
1/2 cup buttermilk |
2 tbsp hot sauce |
1 cup corn meal |
1 cup flour |
2 tsp dried granulated onion |
2 tbsp dried granulated garlic |
1/2 tsp ground cayenne pepper |
1 tsp salt |
1/2 tsp ground black pepper |
4 lbs catfish filets |
oil for frying (corn oil or peanut oil works best) |
Directions:
1. Place oil in a deep fryer and heat to 365. 2. Mix eggs, buttermilk, and hot sauce in a bowl and beat well to make an egg wash. 3. Mix cornmeal, flour granulated onion, granulated garlic, Cayenne pepper, salt and black pepper in a small casserole dish. 4. Cut catfish filets into strips approx. 1 inch thickness. 5. Place catfish strips in egg wash mixture and soak for 3-5 minutes. 6. Remove catfish strips from egg wash and drain briefly. 7. Roll wet catfish strips in flower mixture. Allow catfish strips to sit in flour for 1-2 minutes. 8. Remove the catfish strips from flour, shake off excess flour and place into hot oil. 9. Fry to a golden brown, turning often. 10. Remove to drip pan or paper towels to drain grease. 11. Season to taste and serve with tartar sauce, hushpuppies and slaw. 12. It’s a good idea to ice down the beers before you start this recipe so they’re good and cold at serving time! |
