My husband claims he can’t cook, but every once in while I find him in the kitchen cooking something that he thought up. This is one of those. I left one very important thing out, 2 shots of tequila and lime wedges for the cook and his wife. Ingredients:
1/2 c. butter |
1/2 red bell pepper, diced |
1/2 med onion, diced |
1 c. mushrooms, sliced |
3 cloves garlic, sliced |
2 t. diced jalapeno peppers |
1/2 c. tequila |
1 lime, juiced |
freshly ground black pepper to taste |
2 lb shrimp, peeled and deveined |
Directions:
1. In a large skillet, heat butter over med heat. Sauté next 5 ingredients in butter, stirring frequently, until tender. 2. Stir in tequila, lime juice and pepper. 3. Arrange shrimp in a buttered 13x9x2” baking dish. Pour veggie mixture over shrimp and bake at 400°F for approximately 10 min. Stir shrimp to insure that all are well cooked; if not, continue to bake until done. 4. Serve over pasta or rice. |
