This from Southern Living 6/09 issue. I've made a few changes for our tastes and these are great. Serve with frest fruit for breakfast or with a side salad for dinner. Ingredients:
1/3 cup whole wheat tortilla chip, lightly crushed |
1/4 cup onion, chopped |
1/4 cup tomato, chopped |
2 tablespoons jalapeno peppers, chopped |
1 teaspoon olive oil |
1/4 cup bacon bits |
1/2 cup egg substitute |
salt and pepper |
2 whole wheat tortillas, 8 in |
1/2 cup 2% cheddar cheese |
Directions:
1. Heat oil in 8 skillet. 2. Saute torilla chips, onion, tomato, and pepper 3 to 4 mins till veggies are tender. Add bacon bits and stir. 3. Add in egg substitute and cook till edges are set. Carefully lift up edges to let the uncooked egg go underneath. 4. Once egg is set spoon 1/2 of mixture over each tortilla and top with 1/2 of the cheese. Roll up in your favorite fashion and enjoy. |
