Typicaly Tex Mex breakfast Ingredients:
1 corn tortilla, torn into small pieces |
1 tbsp veg. oil |
1 egg, whisked |
small bit of cooked meat (you may use any you like--i like to do this dish with any leftover taco meat) |
a little bit of jalapeno or salsa, to taste |
cheese, to taste |
salt and pepper, to taste |
Directions:
1. Heat vegetable oil in small skillet. Cook tortilla pieces until slightly golden and crunchy. 2. Add cooked meat and jalapeno or salsa to tortillas crisps. 3. After about a minute or two, add the egg. Cook until egg sets. 4. Add cheese and let it melt in the food. Salt and pepper to taste. 5. The recommendation is to serve this with warm flour tortillas and refried beans. However, this dish is good enough to eat as is. |
