Just another easy something to make for breakfast. I dip the migas into ketchup but others use salsa. Ingredients:
4 corn tortillas |
2 eggs |
2 sprinkles of shredded cheese (optional) |
salt & pepper to taste |
vegetable oil |
Directions:
1. Preheat skillet with oil over medium heat. 2. Tear apart corn tortillas by hand into small bite sized pieces. 3. Toss into skillet and fry tortilla until getting slightly golden. Make sure tortilla doesn’t get too crispy. 4. Add eggs, salt & pepper and scramble/mix together. 5. When egg is almost done add cheese (optional) and cook until egg is done. |
