an easy breakfast idea and a way to use up those extra corn tortillas in your fridge Ingredients:
5-6 eggs |
3 corn tortillas-torn into pieces |
2 tbs butter |
1/4 cup milk |
salt & pepper to taste |
shredded cheese of your choice |
cayenne pepper (optional) |
salsa |
Directions:
1. Melt butter in skillet over medium-medium high heat 2. add pieces of corn tortillas 3. Season tortilla w/ Salt & pepper 4. Fry tortillas until turning golden brown/crispy- While doing this crack and beat your eggs with the milk 5. Add egg mixture over tortillas 6. Add Cayenne pepper to taste 7. When eggs are almost set add shredded cheese 8. Serve with salsa |
