Potato salad thats not that sick cheap stuff from the deli section at Coles. hahaha....no, this is a healthy, lowfat, and slightly different potato sald, but not too different that those who liked the 'traditional' one wont like it : ) Ingredients:
1.5 kg baby potatoes |
6 spring onions, (schallots), sliced |
1/2 cup natural yoghurt |
2 tbsp lemon juice |
1 tbsp honey |
1 tbsp tahini (sesame paste) ...check the health-food section |
1/4 cup fresh mint, chopped |
Directions:
1. Boil the potatoes in a big pot of water for about 12 minutes or so...till theyre just tender. drain and let cool before doing anything else with them. 2. Combine the yoghurt, lemon juice, honey and tahini in a small bowl. 3. when the potatoes are cooled, cut them in half and combine them with the spring onions in a big salad bowl. 4. Gently stir through the dressing and mint and you're done! |
